Recipe to Try: Mexican Grilled Corn

Begin with four ears of corn. Shuck the corn and remove as much corn silk as possible. You can double or triple this recipe as needed. Ingredients for one set of four ears of corn:

  • ¼ cup of butter, melted
  • ¼ cup of mayonnaise
  • ½ cup of cotija cheese, grated. You can substitute parmesan or feta.
  • 4 lime wedges, if desired

Grill the corn evenly for seven to ten minutes, until it is hot and lightly charred. Roll each ear in melted butter and then lightly coat with mayonnaise. Sprinkle the grated cheese on top and serve with a wedge of lime. For variety, sprinkle a dash of chili powder along with the cheese.
